Here is how to easily make delicious, nutrition-packed waffles or pancakes. I make these up every couple of weeks and freeze them. They can then be toasted right from the freezer, topped with organic butter, honey or fruit for a meal, snack or desert. Precise amounts in this recipe are not important.
Raw walnuts, pecans and sunflower seeds.
Fresh ground whole wheat and kamut blended with Wysong Ground Sprouts (oat, spelt, quinoa).
You might be able to get this at your local health food store or you can ask that Cathy here at our offices prepare some for you. This flour should be frozen between uses.
Organic whole milk yogurt or as close to that as you can get.
Wysong Oxherphol antioxidant.
Natural vanilla extract.
Natural Wysong Honey.
Wysong extruded Whole Soy.
Free range organic eggs.
Soak about 1-1/2 cups each of the raw walnuts and pecans in hot water for an hour or so. When the water turns dark brown from the tannins that leach out of the skins, pour this off and rinse the nuts with clean, fresh water. Chop and place in a mixing bowl.
Combine 2-3 cups of the flour/sprout mixture. Add enough pure water, enhanced with WellSpring, to create a fairly thick slurry when stirred.
Add about 1/2 cup of sunflower seeds.
Next, add a cup or so of yogurt and mix in.
While this is all going on, melt 1/3 to 1/2 stick of butter in a small pan. Add a tablespoon or two of honey, and Oxherphol as per label directions, to the butter. When melted, mix and stir into the flour/nut mixture.
Add 1/4 to 1/2 teaspoon of natural vanilla extract and stir.
Add approximately 5-10% of the volume you have thus far created, as Wysong extruded Whole Soy, and mix well.
Separate three eggs, putting the egg whites in a separate small mixing bowl. Stir the yolks into the flour mixture.
With a beater, whip the egg whites into a nice, light white foam. Fold the egg whites into the mixture.
by this time the mixture appears to be too heavy, just add a little
bit of the WellSpring/water mixture. If it is too thin, add a little
bit of flour.
Cook as you normally would waffles or pancakes. Those that you are going to freeze, allow to sit out and reach room temperature before placing them in freezer bags.
One small super waffle or pancake is equivalent in nutritional value to about twenty of those out of a package or in a restaurant. It is a complete, hearty meal in and of itself - rich in protein, essential fatty acids, vitamins, minerals, antioxidants, fiber and phytonutrients. Feel free to experiment with the recipe and add other nutritional goodies as well.
Such carbohydrate-based foods do not match perfectly with the Wysong Optimal Health Program, but this is about the best compromise you could possibly make.
